The pineapple chicken served by Charles’ mom in Chapter 17 was a product of my imagination. So, my friends, if you’re hoping for the recipe, you might as well google it.
However, if it’s mac-n-cheese you’re craving, look no further.
For an authentic taste of the 1970s, here is the actual recipe for mac-n-cheese as featured in Chapter 20 of Kingston 76, courtesy of Coot’s old family recipe collection.
1 lb. elbow macaroni boiled and drained
8 oz. sharp cheddar cheese grated
1 can Campbell’s tomato soup
Save some cheese to garnish the top, mix all ingredients into baking dish, add saved cheese to top, and bake at 350 degrees for 40-45 minutes.
The accompanying salad would be iceberg lettuce, of course, topped with Wish-Bone Italian or Seven Seas Creamy Bacon.

Watergate Salad. Our family subbed in walnuts for the more expensive pistachios. I added pistachio nuts this holiday. It was a hit and now everyone thinks I'm "fancy." lol
For dessert on fancy nights, my mother put a slice of canned pineapple on top of a lettuce leaf, topped with a dollop of mayo. 😋
